Six things weight changes at once
A jighead does not only make the lure sink. It sets the sink rate, the distance you can cast, the angle your line takes through the water, the depth band you can realistically hold, how clearly you feel the bottom, and how much of a bite survives the trip up the line.
Those six effects are linked, which is why a change that solves one problem often creates another. Adding weight to hold depth in current also accelerates the fall past fish that wanted a slower one.
Weights as starting points
The figures below are useful starting points, not rules. Water depth, current, wind, line diameter and lure size all shift them, and the only reliable calibration is what you can actually feel on the day.

Sink rate and the fall
Most light-game bites happen on the fall, so the fall is the presentation. A slower fall gives fish longer to commit and gives you more opportunities to register a change. A faster fall covers water and gets through the top layer when small fish are intercepting everything above the target depth.
Casting and line angle
Heavier heads cast further, but distance changes line angle. The further the cast, the shallower the angle between rod tip and lure, and the more of the line is exposed to current and wind. Beyond a certain distance, extra range starts costing more sensitivity than it gains water.
This is why shortening the cast is sometimes a better answer than changing the head. A close, steep, well-controlled presentation will out-detect a long one almost every time.
Depth and bottom contact
Holding a depth band is a function of weight against flow. Too light, and the rig is lifted and swept by current instead of staying where you put it. Too heavy, and it arrives on the bottom before the fish have seen it.
Bottom contact is worth having even when fish are not on the bottom, because it converts unknown water into a known depth. Feel the bottom once, then fish above it deliberately.
Hook shape and fall angle
Head shape and hook geometry decide how the lure hangs. A head whose weight sits forward and low tends to fall nose-down and dive on the pause; a more balanced head hangs flatter and drifts more horizontally.
Hook gape and wire diameter are the other half of the decision. A wide, fine hook is efficient at converting soft takes on very small soft plastics; a heavier wire is more secure against larger, harder-mouthed species but requires more force to set. Since aji have thin mouth tissue, this choice interacts directly with rod tip type and strike style.
Bite detection
A bite is almost always registered as a change, not an event: a fall that stops early, a weight that becomes weightless, a line that moves sideways, a slight extra load that was not there before.
Everything above exists to make those changes legible. Choose the lightest head that still keeps the change legible in the conditions in front of you — that single sentence is most of the grammar.
